This weekend, I made great progress packing my food. I am taking two weeks of food with me for the Indian section of my trip — some of the places were will be going are quite remote! Each meal is carefully constructed, with all the ingredients measured out and recorded so that I achieve my daily nutritional requirements. Making it challenging was the fact that the food needed to be dairy and gluten free, sugar free, and made with as few processed ingredients as possible. Dinners were cooked and then dehydrated. After that, I vacuum-packed all my meals, so that they remain fresh for India. It’s looking good!
